💛 Tahini’s Citrus Fizz 💛 A fun cocktail I develope 💛 Tahini’s Citrus Fizz 💛
A fun cocktail I developed for our dinners! Just as lovely with alcohol-free gin as with regular gin. It’s up to you!

RECIPE:
- Add a couple of ice cubes to a cocktail shaker
- Add 50 cl @nsane.drinks grapefruit - rosemary
- Add 30 cl gin (N/A if you prefer)
- Shake vigorously 🫨
- Strain and top off with @sanpellegrino_official Limonata

It’s super fresh and citrussy. Makes me dream of those first spring days. Can they please be here soon?

💚 Kalbi Butter Noodles 💚 An oldie but goodie. @ott 💚 Kalbi Butter Noodles 💚
An oldie but goodie. @ottolenghi’s butter noodles from OTK Extra Good Things is super easy to make. You prep the butter before, can even keep it in the freezer, and the dish is ready in a jiffy. You basically add the cooked noodles to the melted butter, throw on some spring onions and sesame seeds, and you’re good to go. 
Super tasty, fast and everyone’s fave!
I’m recovering from a stomach bug and some sort of respiratory virus, but Tahini Bakery is looking forward to February! Starting with a canelé workshop this Sunday 🤩
As I had to cancel last Sunday’s workshop, keep your eyes out for one or two new workshop dates.

❤️ Cornflake Crispy Brownie ❤️ This might be my fa ❤️ Cornflake Crispy Brownie ❤️
This might be my favourite brownie so far, from the 15 brownie recipes I’m making from Brownies & Blondies. I make these for clients a lot!
The base is a simple brownie, and it’s covered with a mixture of cornflakes, dark and milk chocolate, golden syrup, butter and a pinch of salt. The crispiness of the cornflakes with the moist brownie is just everything!
Did you get this book already? You absolutely must!

Busy week ahead for Tahini Bakery, with a zoom call with the fabulous @thelittleplantation (highly recommend her Fearless Focus Mentoring Program), a business lunch catering, TWO canelé workshops and a meeting with our lovely cookbook club. It’s baking themed, so I better get on that!

As my name not so subtly suggests, I love tahini ☺️ Even my cat is called Tahini!
So it’s not a surprise I loved these blondies, recipe 15 of the 30 recipes from ‘Brownies & Blondies’ I’m baking. 
Not too sweet, the earthy tahini, the sesame seeds… Love!

Like so many others, I’ve been baking sourdough bread since 2020. And I never stopped! Lately I’ve been trying a couple of new things, like different techniques and like this country loaf from ‘Het Desembakboek’ by @miro_van_vreckem. 
It’s a rustic loaf made with wheat flour, rye flour and rolled oats. And with my fabulous rye starter, of course!
Worked like a charm 👌

I always rub a little oil on naan dough, so it doesn’t dry out in the hour or so I leave it. And whatever I’m baking, be it naan or sourdough bread, it’s getting a lil slap.

What are you most looking forward to at the start of 2026? For me, it’s getting back in the kitchen and baking sourdough again! Holidays are fine and all that, but I don’t like staying in place too long, physically or mentally. So let’s gooo!

💛 Gulab Jamun 💛 A classic Indian dessert. They’re 💛 Gulab Jamun 💛
A classic Indian dessert. They’re described as an Indian take on donuts. They’re soaked in warm spiced syrup and are just so indulgent. It has cardamom, cassia cinnamon (I used ‘regular’, cloves, star anise and rose water. Not gonna lie, I could drink the syrup by the spoonful 😅 There are so many dishes I can think of where it would work so well with. 
Making the dough was quite the struggle, but I think I have it down now. Once you know how to, they’re done quite quickly.

Another winner from Brownies & Blondies by @sam__dixon! I never knew how much I was into blondies until I got this book 🤣
They’re soft, chewy and buttery 🤤 The cardamom is not overwhelming at all, it’s just a subtle hint. The white chocolate goes perfectly with the cardamom and its sweetness is countered by tangy raspberries. 
Lovely combo, as always. I trust this book 100%. 

Last week was busy, with an Indian inspired dinner with @nom.eat and a very lovely canelé workshop. One more work week until I have to (not completely willingly 😅) calm down until next year. Let’s goooo!

Or Fatayer Mhammar. These mhammar hand pies are everything I love in a bite: warmly spiced filling, flaky pastry and that golden crunch. Comfort food, elevated. This is one of my go-tos when I’m asked to serve meet at a catering job. They’re easy to make ahead, freeze and then bake from frozen whenever you need (or want) them. 
Mhammar chicken is a traditional Palestinian traybake, consisting of chicken, potatoes, onions and red peppers. For Taboon, @hisham_ad wanted to make a more ‘portable’ version of that dish. These hand pies contain all those things: chicken, loads of spices (a lot of black and white pepper too), potatoes, red pepper. I think they’re just lovely little things. 
Would you give these a try? I feel there are so many ways you could mix things up with these hand pies too!

No, seriously, these blondies even converted my matcha hating partner. The matcha has that earthy flavour, blond chocolate (!) was a revelation, and those paired with strawberries… YES.

Okay, okay, I wasn’t doing the best job marbling t Okay, okay, I wasn’t doing the best job marbling the cheesecake of these marbled cheesecake brownies, but did my phone have to give up on life like that? 🙃
Good thing these iPhones are water resistant nowadays, so I could wash it all off. And no worries, this was not a client job 😉

Brownies ✅ Cheesecake ✅ It’s the best of both worlds! I’m still working on baking all 30 recipes from Brownies & Blondies, still going strong 💪
The cheesecake brownies are two classics rolled into one: a lovely, gooey brownie topped with baked cheesecake 👌 They’re pretty filling, so for once I couldn’t eat loads of them, but, like all of these, they made other people very happy too ☺️
I’m never going to stop recommending this book 😂

From Tasting Every Day by @tasting.with.tina, which came out yesterday!
I was lucky enough to get to test a couple of recipes for this book, and the panzanella was one of them. Ever since I first made it, it has become a regular, not only at home but also for catering jobs. When I use my super crunchy homebaked sourdough bread for this, it’s the best thing EVER 🤤 And if you use that nice, crusty bread, you can safely make the salad in advance. The bread will soak up all the lovely flavours, while the crust stays crunchy and fabulous. 100% would recommend.

Just thought I’d share a fun clip from last month, saying goodbye to the last fall leaves. Love going on these walks, checking out the bat houses, saying hello to the chickens and turkeys, and just having a laugh before nap time. Having a beautiful park to go to and getting to share it with my baby is such a gift.

11 down, 19 to go! Yesss, I’m still working on baking every recipe from Brownies & Blondies by @sam__dixon! These banana bread blondies hold a place in the blondie top three. I think. It’s so hard to pick faves, because every new recipe I try becomes a fave 😫🤣 A few have even become catering staples. 
The slightly chewie blondie, the caramelized banana on top… I could eat the whole thing. A good reason to share these bakes with many others ☺️

This is a Fusão (or maybe Ixta Belfrage) appreciation post 🥰 After trying a lot of dishes from the book at this weekend’s cookbook club gathering, I don’t need any more convincing: I love this one!
The whole title is ‘Fusão: Untraditional Recipes Inspired by Brasil’, and the recipes are exactly that. There’s so much to discover still! Ixta is the queen of fusion cuisine and you can tell this is her baby ❤️
The first recipe I made was the plantains with chile honey butter. It says in the recipe to find black plantains and of course I didn’t listen 🙃 DO LISTEN! It was still amazing, of course, but you want the plantains all soft and only baking them is not enough. Still, lovely flavour combo, nice hint of spice… Something special, indeed. 
The next thing I made was black-eyed pea cakes with toasted coconut salsa. I love them so much, I’ve served them at two Tahini Bakery Dinners and brought them to the cookbook club.

Like so many Ottolenghi recipes, this is an oldie but goodie! I made this with purple sweet potato noodles 💜
The chilli oil cleared up my sinuses 🔥 and the broth feels like a warm hug. There’s something so comforting about holding a hot bowl of noodles (or soup). 
I’ve been working on a couple of exciting things I can’t wait to share with you! ❤️

This cake from ‘Baking & The Meaning of Life’ (‘Bakgeluk’ in Dutch) really didn’t need a lot of styling, because it’s beautiful as it is! I added baking paper and a cutting board for texture, some extra honey and thyme to showcase those ingredients, and that’s it!
A quick shoot for a lovely bake. Now the day are getting shorter, I find myself chasing the daylight, but luckily I have a studio with a lot of natural light. On darker days, I may add a little artificial light, but I try not to. 

Disclaimer: no time for fashionable clothes and elaborate hairdos on shooting days, sorry 😅
